For the Tahini Sauce:

  • ¼ cup tahini
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 2–3 tablespoons water (to thin)
  • Salt to taste

For Assembly:

  • 4–6 pita breads or flatbreads, warmed
  • 1 cup shredded lettuce or arugula
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber slices
  • Pickled red onions or pickles (optional)

Recipe

Roast the Vegetables and Chickpeas

  1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the chickpeas, eggplant, bell pepper, cauliflower, onion, and tomato slices. Drizzle with olive oil and sprinkle with cumin, smoked paprika, coriander, turmeric, cayenne (if using), salt, and pepper. Toss to coat evenly.
  3. Spread the mixture in a single layer on the prepared baking sheet. Roast for 25–30 minutes, stirring halfway through, until the chickpeas are crispy and the vegetables are tender with caramelized edges.

Prepare the Tahini Sauce
4. In a small bowl, whisk together the tahini, lemon juice, garlic, and water. Adjust the water to achieve a smooth, pourable consistency. Season with salt to taste.

Assemble the Wraps
5. Lay a warm pita or flatbread on a plate. Add a handful of lettuce or arugula, a few spoonfuls of the roasted chickpea-vegetable mixture, cherry tomatoes, cucumber slices, and pickled onions or pickles if desired.
6. Drizzle generously with tahini sauce and wrap tightly.

Serve
7. Serve the shawarma wraps warm, with extra tahini sauce on the side for dipping.
