Ingredients
- 11 cup quinoa, rinsed
- 1 cup lentils, rinsed
- 2 ½ cups vegetable broth or water (divided)
- 1 head broccoli*, cut into florets
- 1 Tbsp olive oil
- 1 clove garlic, minced
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ½ tsp cumin (optional)
- ½ lemon, juiced
- ¼ cup fresh parsley or cilantro, chopped (optional)
- ¼ cup toasted nuts or seeds (almonds, sunflower seeds, or pumpkin seeds)
- Dressing of choice (tahini, lemon vinaigrette, or yogurt-based dressing)
Instructions
- Cook the Quinoa & Lentils.In a medium pot, bring 2 cups of vegetable broth or water to a boil. Add quinoa, cover, and reduce heat to low. Cook for 15 minutes, then fluff with a fork.In a separate pot, cook lentils in ½ cup broth or water until tender, about 15-20 minutes. Drain any excess liquid.
- Steam the Broccoli. In a steamer basket over boiling water, steam broccoli for 5 minutes, until bright green and tender-crisp. Alternatively, sauté broccoli in olive oil with garlic for 5 minutes.
- Assemble the Grain Bowl. In a large bowl, combine quinoa, lentils, and steamed broccoli.Season with salt, pepper, and cumin (if using). Drizzle with lemon juice.Top with fresh herbs, toasted nuts or seeds, and your preferred dressing.
