Quinoa, Lentil & Steamed Broccoli Grain Bowl

Ingredients
  • 11 cup quinoa, rinsed
  • 1 cup lentils, rinsed
  • 2 ½ cups vegetable broth or water (divided)
  • 1 head broccoli*, cut into florets
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp cumin (optional)
  • ½ lemon, juiced
  • ¼ cup fresh parsley or cilantro, chopped (optional)
  • ¼ cup toasted nuts or seeds (almonds, sunflower seeds, or pumpkin seeds)
  • Dressing of choice (tahini, lemon vinaigrette, or yogurt-based dressing)
Instructions
  1. Cook the Quinoa & Lentils.In a medium pot, bring 2 cups of vegetable broth or water to a boil. Add quinoa, cover, and reduce heat to low. Cook for 15 minutes, then fluff with a fork.In a separate pot, cook lentils in ½ cup broth or water until tender, about 15-20 minutes. Drain any excess liquid.
  2. Steam the Broccoli. In a steamer basket over boiling water, steam broccoli for 5 minutes, until bright green and tender-crisp. Alternatively, sauté broccoli in olive oil with garlic for 5 minutes.
  3. Assemble the Grain Bowl. In a large bowl, combine quinoa, lentils, and steamed broccoli.Season with salt, pepper, and cumin (if using). Drizzle with lemon juice.Top with fresh herbs, toasted nuts or seeds, and your preferred dressing.
