Farro & Cannellini Bean Veggie Soup

Ingredients
  • 1 Tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 multicolor carrots*, sliced
  • 1 cup green beans*, trimmed and chopped
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp oregano
  • ½ tsp smoked paprika (optional)
  • 1 cup farro, rinsed
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1 (28-ounce) can diced tomatoes
  • 6 cups vegetable broth
  • 2 cups chopped greens (spinach, kale, or chard)
  • Grated Parmesan or nutritional yeast for serving (optional)
Instructions
  1. Sauté the Aromatics.In a large pot, heat olive oil over medium heat. Add the onion, garlic, carrots, and celery. Sauté for about 5 minutes, until softened.
  2. Brown the Chicken. Push the veggies to the side and add the chicken drumsticks.Sear for about 3-4 minutes per side until lightly golden.
  3. Simmer the Soup. Add the potato, zephyr squash, cauliflower, cherry tomatoes, salt, pepper, thyme, and paprika. Stir to combine. Pour in the chicken stock and bring to a boil. Reduce heat to low, cover, and let simmer for 30-40 minutes, until the chicken is tender and easily pulls apart.
  4. Shred the Chicken & Add Chard. Remove the drumsticks from the pot. Let them cool slightly, then shred the meat and discard the bones. Return the shredded chicken to the pot along with the chopped chard. Stir and let cook for another 5 minutes.
  5. Serve & Ladle into bowls and enjoy with a slice of crusty bread, like ciabatta!
