If you want a delicious, veggie-packed breakfast, try this Veggie Scramble! Packed with kale, broccoli, and lots of melted cheese, it’s a comforting meal with delicious flavor.

Ingredients:
- 6 eggs
- 1 tablespoon olive oil
- ½ onion, diced
- ½ cup kale*, chopped
- ½ cup broccoli, chopped
- 1 small tomato, diced
- 2 cloves garlic, minced
- ½ teaspoon thyme
- ½ teaspoon oregano
- Salt and pepper to taste
- ¼ cup shredded cheddar cheese
- ¼ cup crumbled feta cheese
- ¼ cup shredded mozzarella cheese
Recipe:
- Sauté the Vegetables. Heat olive oil in a skillet over medium heat. Add onion, garlic, and broccoli. Sauté for 3-4 minutes until softened. Stir in kale, tomato, thyme, oregano, salt, and pepper. Cook for another 2 minutes.
- Scramble the Eggs. In a bowl, whisk the eggs. Pour into the skillet with the veggies. Cook, stirring occasionally, until eggs are fully set, about 3-5 minutes.
- Add the Cheese. Sprinkle cheddar, feta, and mozzarella over the scramble. Let the cheese melt slightly before serving.
