Veggie Scramble with Three Cheeses

If you want a delicious, veggie-packed breakfast, try this Veggie Scramble! Packed with kale, broccoli, and lots of melted cheese, it’s a comforting meal with delicious flavor.

Ingredients:

  • 6 eggs
  • 1 tablespoon olive oil
  • ½ onion, diced
  • ½ cup kale*, chopped
  • ½ cup broccoli, chopped
  • 1 small tomato, diced
  • 2 cloves garlic, minced
  • ½ teaspoon thyme
  • ½ teaspoon oregano
  • Salt and pepper to taste
  • ¼ cup shredded cheddar cheese
  • ¼ cup crumbled feta cheese
  • ¼ cup shredded mozzarella cheese

 

Recipe:

  1. Sauté the Vegetables. Heat olive oil in a skillet over medium heat. Add onion, garlic, and broccoli. Sauté for 3-4 minutes until softened. Stir in kale, tomato, thyme, oregano, salt, and pepper. Cook for another 2 minutes.
  2. Scramble the Eggs. In a bowl, whisk the eggs. Pour into the skillet with the veggies. Cook, stirring occasionally, until eggs are fully set, about 3-5 minutes.
  3. Add the Cheese. Sprinkle cheddar, feta, and mozzarella over the scramble. Let the cheese melt slightly before serving. 
  4. Serve & Enjoy! Serve warm with toast or fresh fruit on the side.
