Peach Yogurt “Cake” Pancakes

This peach yogurt pancake bakes up like a mix between a fluffy skillet cake and a classic breakfast treat. Juicy peaches with tangy yogurt keep the texture soft and custardy. It’s the kind of fruit-forward dish that’s perfect for slow mornings, weekend brunches, or any time you want to turn a simple pancake into something a little more special.

Ingredients:

  • 2 cups plain yogurt
  • 3 eggs
  • ¼ cup cornstarch
  • ¼ cup honey (or to taste)
  • 2-3 peaches*, sliced

Instructions:

  1. Preheat & Prep. Preheat oven to 350°F (175°C).Grease a glass baking dish with butter or oil.
  2. Mix the Batter. In a bowl, whisk together yogurt, eggs, cornstarch, and honey until smooth.
  3. Assemble & Bake. Pour the mixture into the baking dish. Arrange peach slices on top, pressing slightly into the batter. Bake for 35-40 minutes, until set and lightly golden.
  4. Cool & Serve. Let cool slightly before slicing. Enjoy warm or chilled!
